Herkunft

Die direkte Ausrichtung der Probstey nach Süden hin, Steigungen von bis zu 35% und ihre tiefe Lage von 120 bis 170 über NN sind Garant für Spitzenweine. Der Boden ist geprägt durch Tonmergel, Kalkstein und gelbem Meeressand. Das warme Kleinklima der Probstey ist Jahr für Jahr ein Garant für dichte, konzentrierte Spätburgunder Weine, die sich durch intensive dunkle Beerenaromen auszeichnen.

Ausbau

Die Trauben wurden per Hand bei einem optimalen Verhältnis von Aroma, Säure und Reife geerntet. Die Vergärung auf der Maische erfolgte spontan mit natürlichen Hefen aus dem Weinberg für etwa 2,5 Wochen. Anschließend reifte der Wein für etwa 18 Monate in 50% neuen und 50% älteren französischen Barriques. Dies ließ einen sehr intensiven puristischen Pinot Noir entstehen, der den Vergleich mit den großen Weinen aus dem Burgund sucht.

Weinbeschreibung

Vielschichtiger Duft nach dunklen Waldbeeren, Wildkirsche, und floralen Noten. Am Gaumen enorm fein im Gerbstoff und zugleich fest und griffig. Ein Pinot mit Dichte und Länge und salziger Kalkstein-Mineralität.

Welcome to the dark forest with its berries, dry floor and wildflowers. Incredibly deep and complex on the nose, but that barely prepares you for the density of spices, dried Mediterranean herbs, licorice and sandalwood on the rich, medium- to full-bodied palate. There’s a huge structure behind all this, but it’s beautifully integrated. Just let the wine carry you away on its magic carpet at the silky finish. From organically grown grapes. Vegan. Wow, diese Tiefe! Schwarze Frucht in Verbindung mit edlen Terroiraromen, Leder, Tabak, Gewürzen – duftet sehr intensiv, Pinot wie man ihn sich schöner nicht erträumen kann. Geballte Kraft am Gaumen, himmlisch süss, wunderbar frisch, ganz edel strukturiert, gertenschlank und total auf Eleganz gebaut. Das ist Pinot, wie man ihn einfach lieben muss, offen und zugänglich. Das ist schlicht Hochgenuss, den alle verstehen, da muss man nicht viel erklären. Seine edle Grösse ist natürlich trotzdem voll präsent, das ist Weltklasse. Dieser Probstey dürfte viele davon überzeugen, dass Deutschland mit seinen grossen Pinots dem Burgund in nichts nachsteht.

The 2023 Probstey Saulheim Spätburgunder opens with a dry, initially woody nose reminiscent of sawdust but soon develops sweet cherry and redcurrant fruit with chocolate, cacao and mocha cream aromas. Silky very elegant and refined on the palate, this full-bodied, quite generous and round yet elegant Pinot reveals fine, cacao-ish tannins intermingled with limestone salinity. Even if the finish is still a little drying, this is a substantial, promising Pinot with far more expression and finesse compared to the Hölle.

Drinking window: 2028 - 2035 The 2023 Spätburgunder Saulheimer Probstey holds gentle smoke and a touch of matchstick on the nose. Ripe red cherry follows in those smoky tracks, with even an overtone of graphite. The palate has lovely density, darker tones of cherry with a mere edge of bitter cocoa powder. Vivid freshness pervades and underlines the firm, fine tannins. Concentration, purity and brightness are central here, as is that absolutely superb crunch of tannins. (Bone-dry)

Drinking window: 2026 - 2045 The 2022 Spätburgunder Saulheimer Probstey shines with pure, aromatic, ripe red cherry. That same smooth and calm purity of fruit is apparent on the serene palate. Bright freshness meets superfine tannins, uniting into a fine-boned structure that gives the most delicious crunch and melts into that cherry flesh. With every swish across the palate, this sinks deeper into the limestone, seamed by cooling freshness. Detail and poise mean this just sails with complete ease and blithe elegance. Wow. Pure velvet. Im Duft ausgesprochen burgundisch und mit einem sehr verführerischen Fruchtcharme. Viel Kirsche, Sauerkirsche, Himbeere, Erdbeere und etwas Johannisbeere, mit würzigen und noblen Kräutern unterlegt. Auch hier strahlt viel Frische aus dem Glas, was den Wein so unbeschreiblich elegant erscheinen lässt und ihm diese unvergleichliche Strahlkraft gibt. Kraftvoll saftiger und lebendiger Auftakt mit viel Frucht, aber auch mit herrlich frischer Säure. Total delikat ausbalanciert und mit viel Zug nach vorne. Seidig feine Tanninstruktur, die dem Probstey einen genüsslich cremigen Fluss gibt. Nach und nach verschwinden die fruchtigen Aromen im langen Abgang und werden von den würzigen und mineralischen Noten abgelöst.

From clayey marl, limestone and sandy soils of a south-facing, gently rising vineyard, the 2020 Saulheimer Probstey Spätburgunder opens with a deep, intense and spicy as well as refined and beautifully pure bouquet of dark fruits that are well interwoven with toasty and saline nuances. The generosity of the nose is reflected on the palate, which is full-bodied, rich and lush. This is a very elegant and refined Pinot Noir with fine, mineral acidity intermingled with delicate, crunchy tannins. The finish is long and intense, finely saline and beautifully balanced. Next to the Sylvaner, this is another top wine from this less-well-known cru. Tasted as a sample shortly before bottling in August 2022. Bone dry.

The 2021 Spätburgunder Saulheimer Probstey was very millerandaged, which in the end helped in the wet year but resulted in tiny yields, which explains why the grapes ripened. This was matured in 50% new oak with very mild toast. The nose is immediate with dark red cherry, peony overtones and floral verve. The fruit is pure and intense, also in the palate, and there is surprising juiciness, surprising fullness of fruit, despite the taut body with its crunchy, bright tannins. Lovely acidity defines the finish, long, elegant and smoky. (Bone-dry)

Der etwas wärmere Rebberg mit hohem Kalkanteil bringt eher schwarzfruchtige Weine hervor. Da ist denn auch schwarze Kirsche das prägende Element des edlen Duftes, ganz auf der frischen Seite mit zarten mineralischen Komponenten unterlegt, das ist ein grandioser Pinot. Ein Mund voll Wein, köstlich süss und reich in der Aromatik, der Wein bleibt aber immer wunderschön schlank, betont die Frische und setzt auf Eleganz, die hohe Klasse der Pinots aus Deutschland bringt mich immer wieder zum Staunen. Diesen Wein muss man einfach lieben, selbst wenn man kein grosser Pinot-Freund ist. Die Art und Weise, wie der Kraft und Fülle mit Eleganz und Leichtigkeit verbindet, ist schon bemerkenswert. (mg)
