Herkunft
Die Ortsweine stehen für strengste Hand-Selektion bei der Lese und wachsen in den kalksteinhaltigsten Spitzenlagen in Saulheim. Die Erträge liegen auf einem sehr geringen Niveau von etwa 40 bis 55 hl/ha. Die Lese erfolgt bei einer perfekten physiologischer Reife in den letzten Herbsttagen Anfang Oktober.
Ausbau
Nach selektiver Lese in mehreren Schritten nach der Reifestufe der Trauben wurden die Beeren im Keller leicht angequetscht und für 4 Stunden im Saft stehen gelassen, um eine bessere Aromaextraktion zu erreichen. Zu 40% im traditionellen alten Holzfass und zu 60% im Edelstahltank wurde der Most mit natürlichen Hefen aus dem Weinberg 8 Wochen lang vergoren und nach 8-monatiger Vollhefelagerung abgefüllt.
Weinbeschreibung
In der Nase Aromen von reifen Aprikosen und gelben Pfirsichen. Am Gaumen ein Hauch von Kräutrigkeit und cremiger Würze, untermalt von vielen salzig-mineralischen Komponenten vom Kalksteinboden.

The 2023 Riesling Kalkstein Saulheim was harvested from vines at least 20 years old on limestone soils.
Fermented 60% in Stück, with the rest in stainless steel, it stayed on gross lees for eight months. The
nose is pristine with white peach, salt and immensely animating, scented lemon, almost like an ocean
breeze. This is a really pure, bright, pristine Riesling with exquisite contour. It boasts an elegant,
elongated finish and a fine-boned limestone nature. (Bone-dry)

Based on the macerated fruits from younger vines in the calcareous crus of Hölle, Schlossberg and Probstey, Thörle's 2021 Saulheim Riesling Kalkstein offers a clear, bright and refreshing bouquet of white fruits, lemons, crushed stones and salt. Vinified in traditional stücks and in stainless steel and bottled in June this year after seven months on the lees, this is a straight and filigreed but also intense and well-concentrated Riesling with good phenolic grip, mineral drive and an overall tonic character. The 2021 has a lovely sur lie texture and slowly starts showing off. Stimulating bitters on the aftertaste. 12.5% stated alcohol. Natural cork. Tasted in August 2022.

The 2022 Riesling Kalkstein Saulheim is from vines at least 20 years old on the fringes of the estate’s
best vinyards, rooting deeper, with more gradient than the estate Riesling. Half is made in stainless
steel, half in Stück, on gross lees until bottling in late May. Just like the estate Riesling, this opens
with an initial hint of ripe pear but is soon followed by a very cooling, lemony limestone breeze. The
palate is juicy, flowing, vivid and full of vibrancy, coalescing into a lovely, taut finish with beautiful
