Herkunft
Die direkte Ausrichtung der Probstey nach Süden hin, Steigungen von bis zu 25% und ihre tiefe Lage von 120 bis 170 über NN sind Garant für Spitzenweine. Der Boden ist geprägt durch Tonmergel, Kalkstein und gelben Meeressand. Durch den gezügelten Wuchs auf kargem Boden reifen bis zur Weinlese besonders kleinbeerige und hocharomatische Rieslingtrauben.
Ausbau
Nach später selektiver Lese Anfang Oktober 2024 wurden die Beeren im Keller leicht angequetscht und für 4 Stunden in ihrem Saft stehen gelassen, um eine bessere Aromaextraktion zu erreichen. Die spontane Vergärung des Weins erfolgte im klassischen Eichenholz-Stückfass. Die Reifung auf der Vollhefe (sur lie) dauerte bis in den Sommer 2025.

The 2024 Riesling Saulheimer Probstey is from a south-facing sandy loam and limestone slope that is
the warmest in the portfolio. Unusually, the Probstey was harvested last in 2024, when it is typically
one of the earliest single sites to be picked. This fermented in Stück only. A smooth note of lemon on
the nose is tender, with just a touch of smokiness. The palate is complete and bright, with the ripest,
aromatic acidity of freshly zested Amalfi lemon peel and vivid length. There is something pervasive
about this, despite that smoothness. It drives forward and downward into the depth of the soil. This is

reminiscent of crushed stones, apples and starfruit. Elegant and juicy yet even more savory and

old, pre-global warming times. Everything here is in balance, but there's also tension. This is a light
Riesling with energy, finesse and mouthwatering salinity.

The 2023 Riesling Saulheimer Probstey is from Saulheim’s warmest site, which faces south on sandyloam-
topped limestone. Fully fermented in Stück, it opens with lovely reduction, blending with a touch
of lemon balm and ripe lemon peel. The palate is a picture of cool, smooth fluidity. This is harmonious
and cool, gliding along with immense freshness. A beautiful edge of subtle pith and chalk underlines
